What You Need:

  • 1 package of orzo
  • 3 bell peppers (red, yellow, or orange), diced
  • 1 large English cucumber, peeled and diced
  • 1 large bushel of fresh dill
  • Other fresh leafy herbs of your choosing (I like mint, basil, and parsley)
  • 1-3 cups of olives (I like to use a mix of green and black)
  • 1 large block of fresh feta cheese
  • 1 bag of fresh spinach
  • 3 lemons
  • Olive oil
  • Salt

What You Do:

1. Prepare Orzo: 
Prepare the orzo according to the package and set aside.

2. Prepare Dressing: 
a) Zest the lemons (set aside); b) Juice the lemons, strain any seeds, and add an equal amount of olive oil to the juice with 1 tsp of salt; c) Mix vigorously until fully emulsified. 

3. Combine Ingredients: 
a) Add dressing and zest to the orzo and mix well; then stir in the diced peppers and cucumber – set aside; b) Finely chop all herbs, olives, and feta, and then add to the orzo – mix well; c) Stir in the fresh spinach and serve.

Note: You may need to separate into two bowls for mixing.
