Healthy Banana Muffins Your Kids Will Love

My kids love to help make this one, and I add sprinkles to the top, so they love eating them, too. My 2 year old even calls them cake.

We make this recipe more often than almost any other recipe. It is adapted from a recipe from my favorite baking site, Sally’s Baking Addiction.

This is a great way to use up older bananas and is healthy to boot (especially if you add in the optional flaxseed). I get my kids excited to eat them by adding chocolate chips and throwing a few sprinkles on top.

Healthy Banana Muffins Your Kids Love:

Ingredients:

  • 1.5 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ cup flax seeds (optional)
  • 3-4 ripe bananas
  • ⅔ brown sugar
  • 6 tbsp coconut oil or butter (melted)
  • 1 egg (room temperature)
  • 1 tsp vanilla extract (or a splash more)
  • 1 cup chocolate chips (optional)
  • Sprinkles (optional)

This is a great recipe to let your kids help with. It’s likely to get a bit messy anyway, and a little mess is a small tradeoff for building up life skills at an early age. Pro tip: to quickly get your egg to room temperature, place the egg in some hot water while you mix your other ingredients.


Recipe:

  1. Heat oven to 400 F and prepare muffin pans (muffin papers or grease pans with oil or butter).

  2. Peel and mash your ripe bananas (I used a potato masher).

  3. Stir in brown sugar and other wet ingredients (oil, egg, vanilla). Mix well to make sure any sugar clumps are dissolved.

  4. In a separate bowl, combine all dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg, flaxseeds). Stir well.

  5. Add dry ingredients to the wet ingredients and stir until combined into a thick batter.

  6. Stir in chocolate chips or any other desired extras (nuts, sprinkles, etc.)

  7. Evenly distribute muffin batter across muffin pans. Makes 12 mini and 12 regular muffins, or 12 somewhat larger muffins (My kids like a mix of big and littles).

  8. If you’re making a mix of 12 mini and 12 regular muffins, place the mini muffins up top and place larger muffins in the middle of the oven. Bake at 400 F for 5 mins, then without opening the oven, turn it down to 350 F and continue baking – (mini muffins: remove after 5-7 additional minutes) and (regular muffins: remove after 15-18 additional mins).
