If you love espresso martinis, this is a great whiskey alternative for you!
We are calling this coffee whiskey cocktail an Irish Jig because it’s so good it makes you want to dance and the coffee gives you an extra pep in your high step. Lots of people have defaulted to this name for Irish cocktails though… so let me know if you think of something better.


Irish Jig Recipe (1 serving)
- 3 parts Irish Whiskey
- 1 part coffee syrup (see below)
- 1 dash of mushroom cocoa bitters (optional, you can sub in any chocolate bitters or skip this part)
- Shaker and ice
- Chilled coupe glasses
- Coffee beans for garnish
- Combine whiskey, syrup, and bitters in an ice-filled shaker.
- Shake really well…at least 50 shakes because you want a nice white foam on top.
- Serve in a chilled coupe glass with a few coffee beans to garnish.

Bitters: I ordered my bitters from BittersLab, which has an incredible variety. You can also use another chocolate bitters or skip.
No time to make a syrup? No problem. Just dissolve a spoon of sugar into a shot of espresso for each serving.
Coffee Syrup Recipe
This syrup is not only great in cocktails, but also on ice cream or to sweeten your coffee drinks to amplify that coffee flavor.
- 2 cups Concentrated cold brew coffee
- 2 cups Sugar
- Combine coffee and sugar in a small pot, stir to combine and bring to a boil over medium heat.
- Turn down to low heat and simmer for 30 mins, stirring occasionally, and then take off the heat to cool.
- Store in the fridge.
Alternative: If you don’t have concentrated cold brew you can sub in espresso or really strong coffee. The more concentrated the coffee flavor going in, the deeper the coffee flavor in your syrup.
