I absolutely love this Smashed Minty Peas side dish. The fresh peas and mint make this the perfect spring and summer food. Not only is it delicious, but it also brings a burst of color and freshness to your table. It’s perfect for backyard barbecues, family gatherings, or even a cozy dinner at home. Don’t hesitate to whip up this vibrant side dish—your taste buds will thank you!

What You Need:

  • 2 cups fresh peas
  • 1 cup chopped fresh mint
  • 6 tbsp butter
  • ½ – 1 tsp salt

What You Do:

1. Boil the Peas: Start by boiling the peas until they’re tender. This typically takes about 3-5 minutes. You’re not looking for al dente in this case, because we want them soft enough to mash. However, make sure not to overcook them, so you can retain that lovely bright green color.

2. Drain and Mix: Once cooked, drain the peas and add the chopped mint, butter, and salt. The heat from the peas will melt the butter, infusing the dish with a rich flavor.

3. Blend to Perfection: Using an immersion blender, blend the mixture until it reaches a rough puree with a few lumps remaining. If you don’t have an immersion blender, no worries! You can easily mash the mixture by hand or use a food processor for a smoother texture.

4. Serve with Style: Serve your Smashed Minty Peas adorned with a fresh sprig of mint. This little touch not only enhances the presentation but also intensifies the minty aroma.
